About Staci

My Story

Similar to many of my patients, I had digestive and skin issues, brain fog, difficulty concentrating, and hormone imbalances. These troubles started when I was a child and persisted for more than a decade, until the age of 24, when I went back to school to get my masters degree in nutrition. While attending school, I worked with a functional medicine doctor, who helped to guide me in dietary changes (including a gluten-free, dairy-free diet). These changes in my diet, along with temporary supplement support, virtually resolved my long list of ailments. This opened me up to more integrative approaches toward nutrition.  Much of my research and continuing education is in digestive issues, blood sugar control, autoimmune conditions, and cardiovascular health.

 

I was in the science research club in high school, and have been building my knowledge based on research ever since. With the realization that I could impact so many areas of health through diet, I started researching the available data to back up what I knew anecdotally: that an integrated dietary approach could vastly improve patients’ health. At the end of my book there is a research section with more than 500 references to peer-reviewed studies to back up my dietary approaches. 

I am a registered dietitian who is both clinically and holistically trained in integrative nutrition and wellness counseling.   My specialty is in providing tasty and practical tips for various conditions linked to inflammation. Since inflammation has been linked to so many different conditions, my scope of practice is quite large! Making healthy lifestyle changes is not always easy.  My mission is to give people the tools they need to be successful in transitioning to a healthy lifestyle.  My most sought after tool to date is the upcoming release of the 3rd edition of my book, The Meat & Potatoes of a Healthy Meal Plan…no bun intended.   You can also get lots of healthy recipes and wellness tips on my blog and by following me on Pinterest and Instagram.

Staci helped me so much to introduce and navigate the FODMAP diet for my IBS.  Before starting the diet, I was experiencing near daily pain and bloating and could not identify what was triggering it.  But Stacie helped me to figure out what foods I could and could not eat on the FODMAP diet, the science behind the diet, and eventually how to start the reintroduction phase.  She was always there to answer any immediate questions I had and to help me troubleshoot when I was having a problem.  She also helped me to identify supplements that could help me along the way.  With Staci’s help, my symptoms are almost completely under control and I am finally living pain free.  I highly recommend Staci if you are struggling with IBS, SIBO or are interested in the FODMAP diet.

I enlisted Staci's help with a problem I had with high potassium.  Prior to meeting with me, she requested copies of all of my lab results.  I was able to send her results for the last few tests I had.  She told me she thought there was something else going on besides the potassium problem.  I immediately made an appointment with my doctor.  Initially, he told me it was nothing.  Just a slight case of anemia.  I pointed out the issues Staci discussed with me (platelet count and absolute red blood cells).  End result?  He referred me to an oncologist and I was diagnosed with a very rare blood cancer.  Fortunately because of Staci, the disease was caught at an early stage.  A day doesn't go by when I don't wonder what would have happened if I hadn't decided to hire Staci.
